Zoning the kitchen

Specialized fittings and accessories in kitchens mean smoother processes and fewer compromises. A report on the development of the WATER ZONES.

What part does water play in sophisticated, well-designed kitchens? A big part, as the following goes to prove: water is involved in 60% of all cooking related processes. For a long time, the cooker has not been as dominant an element as people might assume. Especially in the large number of domestic kitchens, where cooking is at professional standards these days. We wanted the experience and the tools of professionals to be available for use in these kitchens. As a result, we began developing the WATER ZONES.
We started by talking – to designers from Sieger Design, to architects, professional chefs and domestic users. We also talked to a number of people on a one-to-one basis and in workshops. Our aim was to find out how to fine tune this approach by analyzing processes performed in the kitchen. There were questions regarding hygiene, materials and water temperatures as well as regarding water quality and functionality requirements at each step in the process. For example, what does water have to do differently when cleaning vegetables as opposed to when washing dishes? How much action radius is required in the various “zones”? What do we need to avoid? There was a lot of diverse input and discussions were quite heated, but in hindsight, all this was essential for the result, as now seen with the WATER ZONES. All the responses, workshops and discussions served as a prelude for the WATER ZONES project, which we used and which we shall continue to use to regularly review design and functionality.
The main advantage of kitchen zoning thus very quickly became clear: as soon as you move away from the idea of a single, universal water supply point, products can be optimized to suit their respective functions, with people having to make fewer compromises. Separation also makes sense when it comes to food hygiene. As a result, we initially came up with the definition of four separate zones for different requirements: PREPARING, COOKING, CLEANING and DRINKING. Fittings and accessories were then designed and customized according to their specific purpose in the individual zones. For example, in the context of CLEANING, a rinsing spray can be designed almost exactly like a high-pressure cleaner. In contrast, a spray should be much gentler when PREPARING fresh or cooked food. And when COOKING, it makes sense to have a water source where you can fill your pots directly on top of the stove. So each of the WATER ZONES was given its own configuration – components that any chef or cook can combine to suit their own requirements. In addition, because not all kitchens have room to accommodate all the WATER ZONES, we devised an all-purpose solution.
In the workshop kitchen in the Dornbracht Module Park’s kitchen module in Iserlohn, all processes are tested and optimized in real conditions over and over again until function, design and process are in perfect harmony.

PREPARING

PROFESSIONAL FOOD PREPARATION. PRACTICAL. MODULAR.

Washing, cleaning, chopping, draining – the PREPARING WATER ZONE is best equipped for everything concerning preparation. A special Profi spray with a soft jet for gently rinsing fruit, vegetables and meat.

COOKING

WATER SOURCED DIRECTLY AT THE POINT OF COOKING. CONVENIENT. FAST.

Adding water without having to take the pot off the stove, draining pasta without a long walk to the sink – all a matter of course in a commercial kitchen. Now it can be the same in the domestic kitchen, with the COOKING zone layout. The POT FILLER is just as its name suggests.

CLEANING

EFFICIENT CLEANING OF POTS AND DISHES. HYGIENIC. SPACIOUS.

People want to spend time in the kitchen looking forward to and enjoying meals. In contrast, they want to get the washing-up over and done with as quickly as possible. The Profi spray towers over the sink and has an extra strong jet to get rid of every last speck of dirt and baked-on food.

DRINKING

A SEPARATE SOURCE OF DRINKING WATER IN THE KITCHEN. CLEAR. ELEGANT.

These days, many people want a separate source of drinking water in their kitchen – instead of having to carry heavy canisters of water, they want to make light work of it. Even at home, we are seeing more and more “bars” where people fill their glasses with water or prepare drinks. As a result, we created the new BAR TAP fitting designed specifically for this zone: neat and elegant.


UNIVERSAL

FOR KITCHENS WITH NO DIVISION OF FUNCTIONAL AREAS. CENTRAL. VERSATILE.

The awareness of function optimization brings a number of benefits that no one should have to do without – especially not for reasons of space. That is why we developed UNIVERSAL for smaller kitchens with an extensible rinsing spray set that provides the necessary action radius.
